Creek Cab/Sauvignon
WINEMAKING
Grapes were destemmed and crushed directly into stainless and
inoculated with a selected yeast strain. Fermentation was carried
out in the temperature of 23-28°C with frequent pump overs for
optimum extraction of colour, depth and flavour. Upon completion
of fermentation, this wine was pressed, racked and matured in
selected French miller and vosges oak for a period of 18 months,
during which time the wine was fined, blended and filtered in
preparation for bottling.

Nose Characteristics of plum, berry and tobacco aromas
Palate The palate is full yet elegant with underlying oak
characterised by fine tannin and a flavoursome,
balanced finish
